HCG Mint Cucumber Salad Recipe with Melba Toast

  • 1 large cucumber
  • 1 minced garlic clove
  • 2 T. fresh lemon juice
  • Onion salt
  • Pepper
  • 2 T. chopped fresh mint or ½ t. crushed dried mint leaves


  1. Cut cucumbers in half lengthwise, remove seeds and dice.
  2. Mix cucumber with garlic, lemon juice and mint.
  3. Season with onion salt and pepper.
  4. Refrigerate for 45 minutes.
  5. Toss before serving and garnish with whole fresh mint leaves.

Sit back, relax! There’s something about mint and cucumber that is just satisfying and delicious.

You can even enjoy this salad with some Melba toast crackers.

The length of time that you refrigerate the mixture together will result in a deeper and more uniform flavor. 45 minute chill time is ample, but I sometimes let it go longer.

Another idea would be to add a dash of Braggs liquid amino’s to give it an earthy well rounded flavor. Don’t go overboard though!
